How to change numbers and date from input ?

I'm creating a template for transcribing vital statistics so must enter information as found in original.
When I enter a date Oct-27-27, as written, it changes to 10/27/27. This is not acceptable but I can't find any way of changing it back to my input.
When I entered 00634, it changed to 634, again not acceptable as I must see the leading zeros.

While Calc lets me set formats, I don't see the same in Writer. (Tried searching the forum but got over 300 results to weed through)
Of note, overall I'm quite impressed with OO having used Microsoft since version 1 to version 2004.

It sounds to me like you are entering the data in a table. Try highlighting the table cells then right clicking one of the cells and removing the selection from Number Recognition.
